Or even one of the best in Sydney? Honestly, I don't know. Some nights, yes — we are absolutely one of the best. Other nights, we know we can be better. In fact, I'd argue that today we might actually be a better bar than we were back when we ranked higher on this list. Why? Because we've grown. Our team keeps evolving, keeps pushing, and we keep challenging ourselves. We've become more profitable, smarter with our costs, better with our internal economy — we've learned to be a stronger business.
